I played Grim Fandango till the end before a week and I just started Gabriel Knight II. Already at Chapter3, doesn't look very difficult in the start. I'm a bin fan of the other two Gabriel Knights but I didn't have the chance to play GKII. I also always liked the lucas games and the other classic sierra games. Grim Fandango had one of the best gameplays ever and certainly one of the best programming works ever. Nearly no bugs, and a very complicated gameplay in terms of game making.
However, in short I should say that the Gabriel Knight games had the best scripts ever for mature audiences(I mean 18-20 years old upwards). They are not just fun, they are not just horror, they are not just mystery, they are real novels, with a perfect continueity only found in the best books. And the music, yeah, always perfectly chosen.
I've heard of people saying GK1 is old, and its graphics are bad, and that GK2 is irritating with its videos and the actors/voices are bad and that GK3 is heavy on old computers and the 3d view doesn't look well. But you know what, GK1 had at that time perfect voiceovers when at the same time most gamers didn't even know what voiceovers are. GK2, well as far as I can see since I'm still on it, is very easy to get used to it fast and at the end you wish you had some more of that adventure game type and GK3 had the best story/script of them all. A story that was real, REALLY real at least at many people's beliefs, in part, and in a smaller part fiction and at the same time had that perfect novel quality story that is rarely seen on adventure games.
In short, I wish I had more of those "18-20 +" oriented adventure games and less of the "15-16+". I like those too but come on, it's overdone. Oh well.. that's the audience of course, who can go against marketing and business..
