ScummVM and DOSBox have Linux versions that would allow you to play games from LucasArts and other DOS games.
http://www.scummvm.org/downloads.php
http://www.dosbox.com/download.php?main=1

Inherit the Earth has a Linux version

Wyrmkeep also sells a Linux version of Labyrinth of Time
7 Days a Skeptic and The Adventures of Fatman had Linux versions.
Hopkins FBI had a Linux version.
Ankh and Ankh 2: Heart of Osiris had Linux versions.
Penumbra: Overture and Penumbra: Black Plague had Linux versions.

I can't help you much with how to install the games, except once you have ScummVM installed, you install games on it the same way you'd install them using ScummVM in Windows. You might find ScummVM and DOSBox using the Synaptic Package Manager described on this site

At least they were there in a version of Ubuntu Linux I tried last year.
