I've got two favourites: Grim Fandango and The Longest Journey, although I'm afraid you may find these are two very common choices.

Grim Fandango. One of the few games that has actually "spoken" to me. Powerful stuff.
Quest for Glory series. Because they are awesome, that's why. Why are they so awesome? Because they are made from awesome. Logical.
Pandora Directive. Because it's one of the few games in where you're choices actually affect the plot and the fate of characters. And Tex Murphy is my hero. Man, Tex Murphy is like... ;(... I mean, he reminds us that no matter how bad things seem they will always get worser... but damn it, a man has to do what a man has to do! Tex is awesome! A true hero. A true man who is an example to all boys. I even started smoking because Tex smokes. He calls it P.I's breakfast. That's how awesome he is.

I've played all the Myst games and only liked Riven and Revelation, but Revelation is soo much better than all the rest.

It's either the first Monkey Island or Phoenix Wright 3 (I know it's a very recent game, but I really like it that much). :P
In terms of hard cash, I spent, or more accuratly my parents spent huge amounts of money on an online game called SHADES. It was an old bbc micro adventure on the prestel network, and could have as many as seven or eight players at once! Massive amounts of fun to be had but hideously expensive at peak time.
Overall though, it has to be Grim Fandango. It has already been mentioned, and will be more I'm sure, and for good reason. Playing it again recently reminded me just how good a game of any genre can be. A genuinely adult themed game with fleshed out charcaters whose fate you actually care about. Some might say the puzzles could be a touch random in places, but I would say they had to be. A real favourite of mine, and certainly in my top five games of all time across every platform.

Gabriel Knight 3 closely followed by Grim Fandango and The Longest Journey.

It's so hard to choose just one but the game that got me hooked (no Pirate pun intended lol) was CMI it was the first AG I bought. But after a long decision my favourite top 10 are:

Gabriel Knight Series (I'll put 2 - 1 - 3) overall.
As classics, GK is followed by King's Quest VI.
In very recent times, the small, indipendent Barrow Hill.

I third the Gabriel Knight series. :)
It's hard to pick a favorite, but I know which game I've played through the most times: Sam & Max: Hit the Road. 20 times or more... closely followed by Day of the Tentacle at 10-15 times. ;p
The only newer game I've enjoyed every minute of, was Dreamfall. After finishing it the first time, I managed to wait a grand total of one week before starting over again in "make sure I don't miss out on anything" mode. That doesn't mean it's my favorite game, just that it was one of those rare experiences where I never felt bored, annoyed, or frustrated while playing. Yes, I know a lot of people will wonder if I've played the same game as them when seeing that statement. ;p

The Syberia games are my favourite that I've played in the last five years. Something about the atmosphere and storytelling had me absolutely hooked.
All time? Probably either Secret of Monkey Island or Space Quest III, because they made me laugh so hard and always do.

Zak McKracken and the Alien Mindbenders - It was the first adventure game i played, waaay back in 1989. I have played many ags after that but none of them have been even as near as awesome as Zak McKracken.

..there have been plenty of mentions of the broken sword series; some of my own favourites, but it seems that many did not like the second game! i played it first (not paying attention again) and enjoyed it immensely. can't recall the name off hand...just love the charactors and humour.
also, just replayed secret files tunguska, which i found excellent, and before that, nibiru....all good stuff for the troops!

1.) The Monkey Island Series: The Secret of Monkey Island is my personal favorite! MI2 and MI3--I consider them great Classics as well!!
As for MI4, it was very good too but I liked the others in the series much better.
Other great ones:
- Quest for Glory Series: 1-4 (all are awesome!!)
- Space Quest Series: 1-6 (part 4 and 5 are favorites of mine; part 6 was good)
- King’s Quest: 1-7 (KQ 2 + 5; overall, all are pretty good though I think)
- Gabriel Knight: Sins of the Fathers. I have never played GK2 unfortunately but it should be pretty good. I absolutely loved “Sins of the Fathers” though! I did not like GK3 very much however.
- Indiana Jones and the Fate of Atlantis: Classic!
- Loom: Another Classic! xD
...I could list so many other great ones, but then the list would be too long I’m afraid so I will just leave it at that. :)

It's always been impossible me to choose definate favourites within AG genre, because there are so many different adventure games with different themes.
I've always even struggled to even pick 10 favourite adventure games ( in random order), and the list is probably different every time...
Let's just say, when I think of mysteries, I think of Gabriel Knights ( GK3 my favourite), Broken Swords ( BS1 easily the best) and Indiana Jones. When I think of thrillers, I think of Moment of Silence ( game had it's flaws, but I loved the story), when I think f humoristic games, certain Lucasarts games are up there and it's impossible for me to say which is the best. :)

I've played so many AG's I really liked so to pick just one of them as a favorite would be very difficult and unfair.
That said, Gabriel Knight and the Sins of the Fathers, Conquests of the Longbow and Quest for Glory 1-4 are in no particular order my top 3. I'm not much for ranking as all the games have been played at different stages not only in life, but also in the manner of technological development.
